The Virgin Vegan: So moist....so sweet....so coffee-ey?

Many people assume that being a vegan means eating things like raw tofu or moss with kelp juice, all while slowly withering away from the lack of bacon (on the contrary, I am a rather curvy and well-fed woman).

While I do LOVE trying new foods and I regularly experiment with various new and international recipes and ingredients. I chose to try not to post about these because they can be intimidating to some people who grew up on McDonalds and fried chicken. Since so many of my friends and family fall into the above category, I often try to re-create 'normal' foods in order to show everyone that you don't have to give up what you love to be healthier and to live according to a simple and kind diet.

I have certainly encountered my share of skepticism from other people when they find out about my veganism...people often get offended, as if by my choosing not to eat what they eat, I am insulting them or doing something scandalous.....seriously! You would think I was an alien stealing candy from a baby while streaking through a church at high noon!

Seriously though, I truly hope you enjoy this sneak peak into my journey of cooking successes and failures, and perhaps even learn something in the process.

P.S., I do love raw tofu and Kelp Juice.....just don't tell anyone!
